JD is Tennessee a sour mash whiskey which is distilled, filtered, then aged in barrels. Old No. 7 whiskey is double-distilled in copper column stills and then is run through 10 feet of charcoal made from hard sugar maple before being aged in new charred white oak barrels, which are used just once. (80 proof, 40% alcohol)
Smells sweet and feels smooth. Plenty of roundness from the corn and sweet vanilla from the barrel aging. A bit tartness and charcoal on the finish with notes of white pepper and a hint of caramelize apricots.
